Swiss Chard Wraps with Turmeric Sauce

Turmeric Sauce
1 organic young Thai coconut, flesh from (approximately 1 cup, packed)
1/3 cup fresh coconut water (from organic young Thai coconut)
1 clove of organic garlic
1/2 teaspoon fresh chopped organic ginger
1/2 organic lime, juice from
1 teaspoon turmeric
1/2 teaspoon coriander
pinch Himalayan salt
pinch of pepper
Blend all ingredients in high-speed blender until smooth. Set aside to let flavors mix.
4-8 organic Swiss Chard leaves
1 organic red bell pepper, cut into thin strips
1 carrot, cut into thin strips
1 cup cherry tomatoes, cut in half
1/2 cucumber, cut into thin strips
1 cup of organic or homemade alpha sprouts
1 organic avocado cut in thin strips
Place filling ingredients on collard leaf. Top with dressing. Roll and cut in half. Serve right away. Store leftovers in fridge for a maximum of 5 days.
