Sweet Arugula Salad

Sweet Arugula Salad

This salad is a delicious mix of sweet and bitter. Perfect for a side dish or main. Add grilled chicken breast for added protein.

Salad Ingredients:

• 6 cups loosely packed arugula

• 2 cups seedless grapes, red or green halved

• 1 orange or yellow tomato, wedged

• .1/2 red onion thinly sliced

• 1 avocado, peeled and diced

• 1/2 cup toasted walnuts

• coconut balsamic vinaigrette (www.olivethat.ca)

Dressing Ingredients:

• 1/3 cup extra virgin olive oil

• 3 tbsp. coconut infused white balsamic vinegar (or any sweet vinegar –

www.olivethat.ca)

• 1-2 tbsp. raw honey or maple syrup

• . tsp. salt

• 1/8 tsp. black pepper

Directions:

To make the salad: Toss all ingredients together and drizzle with dressing.

To make the dressing: Whisk ingredients until emulsified – 30 seconds.
