Red Quinoa Salad

This is one of my daughters absolute favorites and she is 7! It’s super easy and tasty!


1 Red Pepper diced
1 large Tomato diced
1 cucumber diced
2 cups quinoa, red or white
½ large onion
½-1 vegetable cube

½ cup vinegar
2/3 cup oil
1 tbsp water
6 garlic cloves
2 tbsp onion
¾ tsp sugar
1-1/2 tsp Oregano
¼ tsp pepper
1/8 tsp basil
¾ tsp parsley
1/8 tsp celery salt
Salt to taste.

In a pot add in 2 cups of water or broth and the salt. Bring to a rolling boil.  Add Quinoa.

Lower heat and cook, covered, for 15 minutes. Turn heat down to the lowest setting. Cover and cook for 15 minutes.

Let stand, covered, for 5 minutes: Remove the pot from heat and let stand for 5 more minutes, covered.

Let cool then add tomatoes, peppers, onions and mix with dressing.
