Rainbow Potato Salad 


1.5 Lbs Potatoes (Red, Yellow,
White and Blue)
5 Tbsp Veganaise or Mayonnaise
3 Tbsp Dill Pickle Juice
2-3 Tbsp Nutritional Yeast
1/4 Tsp Salt
Pepper to taste

1/4 Cup Carrots
1/4 Cup Celery
1/4 Cup Orange or Red Sweet Pepper
3 Tbsp Dill Fresh or Seeds
1-2 Tbsp Dill Pickles
1 Tbsp Red Onion
2 Tbsp Green Pepper
2 Tbsp Radish
3 Tbsp Green Onion


1. In a medium pot, bring water to boil. Add potatoes and cook 10 mins or until soft. Set aside and cool.

2. In a large bowl, combine mayo, pickle juice, nutritional yeast, salt and pepper.

3. Add raw veggies to bowl and combine. When potatoes have cooled add to bowl and mix.
