5 tbsp olive oil
2 1/2 cups black beans, drained and rinsed
2 1/2 cup salsa
5 sweet potatoes
2 1/2 cup shredded cheddar cheese
2/3 cup Greek Yogurt
5 tbps lime juice
Sprigs fresh cilantro
Wash and dry sweet potatoes and pierce several times with fork. Microwave for 10 minutes or bake at 400 for 45 mins-1hr until flesh is soft.
In a non stick skillet over medium-high heat, warm oil. Stir in beans and salsa – cook, stirring until heated through. About 5 mins
With tongs, transfer sweet potato to serving bowl. With tip of knife, slice X on top side, with fork, peel back skin, then fluff flesh. Make well enough room for bean mix
Spoon bean mix into sweet potato, top with cheese, yogurt, lime juice and cilantro.
