Andrea Miller’s Tips for including fruit and veggies in holiday meals:
-include raw veggies on your appetizer plates
-add sections of Clementine’s to food platters and plates
– try roasted veggies with dinner- green beans and brussel sprouts are great for roasting
– include a festive salad with dinner- add some sliced pears, dried cranberries and sliced almonds for colour, flavour and texture
-try Sweet potatoes baked or mash with vegetable broth or skim milk and add vanilla extract, lemon zest, orange juice, ginger and or nutmeg.
-have a fruit-based dessert- cinnamon-baked apples, apple-cranberry crisp, fruit kebabs (see link for recipe below), even a few strawberries dipped in chocolate can be a nice treat to end a festive meal.
